Appellation Earth's Napa Valley Red Blend begins in the sun drenched vineyards of Napa Valley. Once our Merlot, Cabernet, Zinfandel, & other varietals arrive at the winery, we sort them for quality using a Pellenc destemmer. This state-of-the-art equipment gently removes the berries from the stems and sorts them by size.
The berries are then lightly crushed and sent to open top stainless steel fermenters. Our yeasts are specially cultured for quality and color that is needed for a full bodied red blend. Yeast and nutrients are added to the fermenters where our blend will begin.
Under temperature-controlled conditions, the ‘must’ will slowly ferment for several days. During this process and after, our team gently ‘punches down’ the tops of the wine to keep contact with the skins, where our rich, deep red color, dark fruit and currant flavors develop. Allowing our wine to settle, we separate the wine from the skins by pressing the ‘must’ through a state-of-the-art Bucher pneumatic press.
The unfinished wine is then put into chilled tanks for stabilizing; the process where calcium & potassium salts are removed over time by the chilling of the wine. Once stabilized, Appellation Earth is ‘racked’ to individual oak barrels, a blend of French and American White Oak. Each barrel is periodically sampled and analyzed.
Not all barrel lots are the same. Some require longer aging. The average barrel aging is 12 months. We determine which barrels become part of the Appellation Earth program. These barrels are blended together and aged in stainless steel. Our team then decides the right moment when to capture Appellation Earth at its best right before bottling. Our blend is then bottled and aged several months before release.
Appellation Earth is a seductive blend with aromatic dark fruit and sage with vanilla, cocoa, and a hint of cedar. This is a blend consisting of 34% Merlot, 28% Cabernet Sauvignon, 19% Zinfandel, 11% Petite Sirah, 3% Malbec, 2% Petit Verdot, and 2% Other for blending and acid balance.
